Vinification

Appearance of burnished copper. The nose is a mellow combination of dried mangos, dried apricots and honey. The palate is full bodied with a thick, viscous consistency and is pared by pithy astringency and a fresh acidic finish.
GRAPE VARIETY:Muscat de Frontignan  DATE TASTED:April 2007
Grapes are hand harvested and after crushing and destemming are left on their skins for several days to macerate. This process aids in the eventual pressing of the grapes as they yield their juice much easier when the skins are soft and slightly broken down. Fermentation in stainless steel tanks is followed by a lengthy cellar maturation process that can take up to four years and involves at least two years barrel maturation.

Vinification

Green appearance with subtle golden hues. Aromas of nectarines, green figs and some fine herbal character. Palate is richly textured, powerful and complex with a fine, long finish.
Blocks were individually harvested and separately vinified before blending the final wine. We focused on things like the juice turbidity and fermentation temperature in order to build weight and texture and more importantly, an ability to age once bottled.
